Why was I diagnosed at a glance in brazil with celiacs, and why was it missed for 42 years here in USA?

I had suffered symptoms of Celiacs for years not knowing what it was. I went full sprue at the age of 29. It didn't stop until I was 38. Every day, waking up to high levels of pain, barfing and pooing , and going to work after the pain subsided, if it subsided. I found my life other and we went to brasil. I was fat[from high stress cortisol, therefor masqued]I went on atkins diet. Low and behold, lost weight fast. Was happier and healthier instantly. But I had this strange rash on my hands. Bubble of itchy water, on my palms and between my fingers.In this 3rd world samll town hospitol, 5 years past, the doctor looked at me and said you look to have some food allergy.. to wheat. I chuckled and said to my wife to be," the bread of christ, the amber waves of grain?" I got married and settled and went off atkins. As the new stress mounted and the eating amber waves commenced, it began again. why have my sugars not been checked once since dq2ing?Why did they fight my diagnosis?
